Ingredients
  

200g fresh udon noodles

3 tablespoons chili oil (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sugar

1 clove garlic, minced

2 green onions, finely sliced

1 small carrot, julienned

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Udon: Boil a pot of water. Add fresh udon noodles and cook according to package instructions (usually about 2-3 minutes). Drain and rinse under cold water to stop cooking.

    Prepare the Sauce: In a large bowl, combine the chili oil, soy sauce, rice vinegar, sugar, and minced garlic. Mix well until the sugar is dissolved.
