Ingredients
  

1 lb shrimp, peeled and deveined

2 cups mixed vegetables (bell peppers, broccoli, carrots, and snap peas)

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons vegetable oil

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt and pepper to taste

Cooked rice or noodles, for serving

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Ingredients: Rinse and pat dry the shrimp. Chop all vegetables into bite-sized pieces to ensure even cooking.

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

      Cook the Shrimp: Add the shrimp to the hot skillet, seasoning with a pinch of salt and pepper. Cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp and set aside.

        Sauté the Veggies: In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the mixed vegetables and stir-fry for about 3-4 minutes until they are tender-crisp.

          Combine with Sauces: Return the cooked shrimp to the skillet. Pour in the soy sauce, oyster sauce, and sesame oil. Stir well to combine all the ingredients.

            Thicken the Sauce: Add the cornstarch slurry to the skillet, stirring constantly until the sauce thickens and coats the shrimp and veggies, about 1-2 minutes.

              Serve: Remove from heat. Serve the shrimp and veggie stir-fry over cooked rice or noodles, garnishing with sesame seeds and chopped green onions.
