4 tilapia fillets (about 6 ounces each)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

Salt and pepper to taste

Cooking spray (for air frying)

Lemon wedges (for serving)

Prepare the Breading Station: Set up three shallow dishes. In the first dish, place the flour seasoned with salt, pepper, garlic powder, onion powder, and smoked paprika. In the second dish, whisk together the eggs and Dijon mustard. In the third dish, combine the panko breadcrumbs with dried oregano and a pinch of salt.

    Coat the Tilapia: Pat the tilapia fillets dry with paper towels. Dredge each fillet in the flour mixture, shaking off the excess. Next, dip it in the egg mixture, allowing any excess to drip off. Finally, coat each fillet in the panko breadcrumbs, pressing gently to adhere.

      Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

        Air Fry the Fish: Lightly spray the air fryer basket with cooking spray. Arrange the breaded tilapia fillets in a single layer in the basket (you may need to do this in batches). Lightly spray the tops of the fillets with more cooking spray.

          Cooking Time: Air fry the tilapia for 10-12 minutes, flipping halfway through, until golden brown and the fish flakes easily with a fork.

            Serve: Carefully remove the tilapia from the air fryer and serve immediately with lemon wedges.
