1 cup raw almonds

1 cup granulated sugar

1/2 cup light corn syrup

1/4 cup unsalted butter

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon baking soda

Line a baking sheet with parchment paper and set aside. Toast the almonds in a dry skillet over medium heat for about 5 minutes, stirring frequently until golden and fragrant. Remove from heat and let cool slightly.

    In a medium saucepan over medium heat, combine the granulated sugar, corn syrup, and salt. Stir until the sugar dissolves and the mixture begins to boil.

      Allow the mixture to boil without stirring for about 5 minutes, or until it turns a light amber color. Keep an eye on it to prevent burning.

        Once the syrup reaches the desired color, reduce the heat to low and stir in the butter and vanilla extract. Mix until the butter has melted completely.

          Carefully add the toasted almonds to the mixture and stir continuously for another 2-3 minutes, ensuring the almonds are evenly coated.

            Remove the saucepan from heat and quickly stir in the baking soda. The mixture may bubble up, so be cautious!

              Pour the hot almond mixture onto the prepared baking sheet. Using a greased spatula, spread it out to your desired thickness.

                Allow the brittle to cool completely at room temperature, which should take about 30-45 minutes. Once cooled, break it into pieces.
