Ingredients

4 large croissants (preferably day-old)

1 cup almond paste (or marzipan)

1/2 cup slivered almonds

1/3 cup powdered sugar

1/4 cup unsalted butter, softened

1/4 cup heavy cream

1 teaspoon vanilla extract

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Almond Filling: In a mixing bowl, combine the almond paste, softened butter, powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Mix until you achieve a smooth, creamy consistency.

Cut the Croissants: Slice the croissants in half lengthwise to create a pocket. Be careful not to cut all the way through.

Fill the Croissants: Generously spread the almond filling inside each croissant half, then press it back together gently.

Add Slivered Almonds: Top each filled croissant with a sprinkle of slivered almonds, pressing them lightly into the filling.

Prepare Egg Wash: In a small bowl, whisk together the egg and milk. Brush this mixture over the tops of each croissant to give them a beautiful glaze.

Bake: Place the croissants on the prepared baking sheet and bake in the preheated oven for about 15-20 minutes, or until they are golden brown and puffed.

Cool and Serve: Remove from the oven and let them cool slightly before serving. Dust with powdered sugar if desired, and enjoy warm!
