Ingredients
  

1 tablespoon olive oil

1 onion, diced

2 garlic cloves, minced

1 pound Andouille sausage, sliced

4 cups corn kernels (fresh or frozen)

2 medium potatoes, diced

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon lime juice

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and sliced Andouille sausage. Cook for another 5-7 minutes until the sausage is browned and fragrant.

      Add the corn kernels and diced potatoes to the pot. Stir well to combine all ingredients.

        Pour in the chicken broth, then add the smoked paprika, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, stir in the heavy cream and lime juice. Let the chowder simmer for another 5 minutes to heat through.

            Taste and adjust seasonings if needed.

              Serve hot, garnished with fresh parsley.
