1 cup rolled oats

1 cup milk (or plant-based milk)

1 medium apple, peeled and grated

1 large egg

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

Butter or oil for cooking

Instructions
 

In a large mixing bowl, combine the rolled oats and milk. Let sit for about 10 minutes to soften the oats.

    Stir in the grated apple, egg, maple syrup, and vanilla extract until well combined.

      In another bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.

        Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.

          Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.

            Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

              Flip the pancakes and cook for another 2-3 minutes on the other side, or until golden brown.

                Repeat with the remaining batter, adding more butter or oil to the skillet as needed.

                  Serve the pancakes warm, topped with extra grated apple, a sprinkle of cinnamon, and a drizzle of maple syrup.
