2 cups dried apricots (preferably Turkish or California)

1 cup water

1/2 cup honey or agave syrup

1 teaspoon lemon juice (freshly squeezed)

1/2 teaspoon ground cinnamon (optional)

Pinch of salt

Optional nuts (walnuts or almonds) for texture

Instructions
 

Prepare the Apricots: Rinse the dried apricots under cold water to remove any residue. If they're very dry, soak them in warm water for about 30 minutes to soften.

    Simmer the Mixture: In a medium saucepan, combine the soaked apricots (or dried if not soaking), 1 cup of water, honey or agave syrup, lemon juice, and a pinch of salt. Bring it to a gentle simmer over medium heat.

      Cook Slowly: Reduce the heat to low and simmer for about 20-30 minutes, stirring occasionally, until the apricots are very soft and most of the liquid has evaporated.

        Blend Until Smooth: Remove from heat and allow to cool slightly. Transfer the mixture to a blender or food processor. If desired, add the ground cinnamon for extra flavor. Blend until you achieve a smooth, thick paste.

          Optional Nut Addition: For added texture, throw in some chopped nuts and pulse a few times until they're coarsely mixed into the apricot paste.

            Setting the Paste: Pour the paste into a small, greased loaf pan or a baking dish lined with parchment paper, smoothing the top with a spatula.

              Cool and Store: Allow it to cool to room temperature, then refrigerate for at least 2 hours, or until firm. Once set, slice it into squares or rectangles.
