For the Asado Chicken:

4 chicken thighs, bone-in and skin-on

3 cloves garlic, minced

2 tablespoons fresh oregano, chopped (or 1 tablespoon dried)

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon salt

1 teaspoon black pepper

1/4 cup olive oil

Juice of 2 limes

Zest of 1 lime

For the Sauteed Lemon Zucchini:

2 medium zucchinis, sliced into half-moons

2 tablespoons olive oil

1 clove garlic, minced

Juice of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    In a large bowl, combine minced garlic, oregano, smoked paprika, cumin, salt, pepper, olive oil, lime juice, and lime zest. Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Cook the Chicken:

        Preheat your grill or oven to 400°F (200°C). If using a grill, place the marinated chicken skin-side down and cook for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C) and the skin is crispy. For oven roasting, place the chicken on a baking sheet and cook for 30-35 minutes until golden brown and cooked through.

          Prepare the Zucchini:

            While the chicken is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced zucchini and sauté for about 5-7 minutes until tender but still crisp.

              Add Lemon Flavor:

                Drizzle the sautéed zucchini with lemon juice, season with salt and pepper to taste, and stir to combine. Cook for an additional 1-2 minutes to allow the flavors to meld.

                  Serve:

                    Plate the crispy Asado chicken alongside a generous serving of sautéed lemon zucchini. Garnish with chopped parsley for a fresh touch.
