4 large russet potatoes

1 small onion, finely grated

2 large eggs

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon baking powder

Vegetable oil (for frying)

Applesauce or sour cream (for serving)

Instructions
 

Prepare the Potatoes: Peel the potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a large bowl and immediately cover with cold water to prevent browning.

    Drain: After grating all the potatoes, drain them in a fine mesh sieve or cheesecloth and press out as much liquid as possible.

      Mix Ingredients: In a separate bowl, combine the grated potatoes, finely grated onion, eggs, flour, salt, pepper, and baking powder. Stir until the mixture is well combined and forms a thick batter.

        Heat Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until shimmering.

          Fry the Pancakes: Spoon a heaping tablespoon of the potato mixture into the hot oil, flattening it slightly with a spatula. Fry for about 4-5 minutes on each side or until golden brown and crispy. Depending on the size of your skillet, you may need to work in batches.

            Drain Excess Oil: Once cooked, transfer the pancakes to a paper towel-lined plate to absorb excess oil.
