  • 400 g spaghetti or tagliatelle
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 medium carrot finely diced
  • 1 stalk celery finely diced
  • 500 g ground beef or a blend of beef and pork
  • 100 ml vegetable broth
  • 400 g crushed tomatoes
  • 2 tablespoons tomato purée
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and freshly ground black pepper
  • 50 g freshly grated Parmesan cheese

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, garlic, carrot, and celery; sauté for 5-7 minutes until tender.
  • Increase heat to medium-high and add the ground meat; cook until browned, about 8-10 minutes.
  • Pour in the vegetable broth and simmer for 2-3 minutes.
  • Stir in crushed tomatoes, tomato purée, oregano, basil, salt, and pepper; bring to a boil.
  • Reduce heat to low, cover, and simmer for at least 30 minutes, stirring occasionally.
