Ingredients
  

2 lbs chicken pieces (bone-in, skinless preferred)

3 tablespoons Jamaican curry powder

2 teaspoons allspice

1 teaspoon smoked paprika

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1 large onion, chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

2-3 sprigs of fresh thyme (or 1 teaspoon dried thyme)

1-2 Scotch bonnet peppers (whole for mild, chopped for hot)

1 large bell pepper (red or green), sliced

3 carrots, sliced

1 can (400ml) coconut milk

2 cups chicken broth

4 green onions (scallions), chopped

2 tablespoons vegetable oil

Juice of 1 lime

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with the curry powder, allspice, smoked paprika, salt, black pepper, minced garlic, grated ginger, and lime juice. Mix well to coat the chicken evenly. Allow to marinate for at least 1 hour, or overnight in the refrigerator for deeper flavor.

    Sauté Aromatics: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

      Brown the Chicken: Add the marinated chicken pieces to the pot. Brown the chicken on all sides until golden (about 5-7 minutes).

        Add Vegetables: Stir in the sliced bell pepper, carrots, thyme, and whole Scotch bonnet peppers. Cook for an additional 3-4 minutes.

          Combine with Liquids: Pour in the coconut milk and chicken broth, ensuring the chicken is covered. Bring to a boil.

            Simmer: Reduce the heat to low and cover the pot. Allow the curry to simmer for about 30-40 minutes, or until the chicken is tender and the sauce has thickened. Stir occasionally and adjust the seasoning if necessary. If you prefer a less spicy dish, keep the Scotch bonnet whole until the end and remove it before serving.

              Final Touch: Adjust salt to taste, and sprinkle in the chopped green onions just before serving.

                Serve: Serve hot over steamed white rice or with traditional Jamaican rice and peas. Enjoy the flavors of Jamaica in every bite!
