8 oz elbow macaroni

6 slices of thick-cut bacon, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

3 cups sharp cheddar cheese, shredded

1/2 cup grated Parmesan cheese

1/2 cup panko bread crumbs

Fresh chives, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and place it on a paper towel-lined plate to drain.

      Make the Cheese Sauce: In the same skillet with the bacon fat (add butter if needed), melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until golden.

        Add Milk: Slowly pour in the milk while whisking continuously to prevent lumps. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.

          Season the Sauce: Stir in the Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Lower the heat and gradually add the sharp cheddar and Parmesan cheese, stirring until melted and smooth.

            Combine: Add the cooked macaroni and crispy bacon to the cheese sauce and mix until well coated.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased 2-quart baking dish.
