1 cup quinoa (rinsed)

2 cups vegetable broth

1 can black beans (drained and rinsed)

1 cup corn (fresh or frozen)

1 red bell pepper (diced)

1 avocado (sliced)

1 cup cherry tomatoes (halved)

1 lime (juiced)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro (for garnish)

Tortilla chips (for crunch)

Optional: Greek yogurt or sour cream for serving

Instructions
 

Cook the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, cover, and reduce heat to low. Let it simmer for about 15 minutes or until the liquid is absorbed. Once done, fluff with a fork and set aside.

    Prepare the Veggies: While the quinoa is cooking, heat a medium skillet over medium heat. Add the diced red bell pepper, corn, cumin, smoked paprika, salt, and pepper. Sauté for about 5-7 minutes until the bell pepper is tender and the corn is cooked.

      Mix the Beans: In a large bowl, combine the cooked quinoa, sautéed veggies, and black beans. Squeeze in the fresh lime juice and mix well to combine all the flavors.
