Ingredients
  

200g (7 oz) uncooked pasta (penne or fusilli works best)

200g (7 oz) block of feta cheese

400g (14 oz) cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra-virgin olive oil

1 tsp red pepper flakes (adjust for spice level)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large baking dish, combine the halved cherry tomatoes, minced garlic, olive oil, red pepper flakes, salt, and pepper. Mix well until the tomatoes are evenly coated.

      Nestle the block of feta cheese in the center of the tomato mixture. Drizzle a little extra olive oil on top of the feta and sprinkle with salt and pepper.

        Bake in the preheated oven for 25-30 minutes, or until the tomatoes are blistered and the feta is golden and slightly softened.

          Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

            Once the feta and tomatoes are done, remove the dish from the oven. Use a fork to mash the feta cheese and tomatoes together to create a creamy sauce.

              Add the cooked pasta to the baking dish and gently toss to combine. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

                Taste and adjust seasoning with additional salt, pepper, or red pepper flakes if needed.

                  Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired.
