Ingredients

4 large russet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 cup grated Parmesan cheese

2 teaspoons dried Italian herbs (oregano, basil, thyme)

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 425°F (220°C).

Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry.

Cut each potato into wedges, about 8 wedges per potato, ensuring they are evenly sized for consistent cooking.

In a large bowl, combine the olive oil, minced garlic, dried herbs, paprika, salt, and black pepper. Mix well to create a marinade.

Add the potato wedges to the bowl and toss them in the marinade until every wedge is well-coated.

Spread the coated potato wedges in a single layer on a large baking sheet lined with parchment paper for easy cleanup.

Bake in the preheated oven for 25 minutes. After 25 minutes, remove the wedges and sprinkle the grated Parmesan cheese evenly over them.

Return the baking sheet to the oven and bake for another 10-15 minutes or until the wedges are golden brown and crispy.

Once baked, remove them from the oven and allow them to cool for a couple of minutes.

Garnish with fresh chopped parsley and serve hot with your favorite dipping sauce.
