Ingredients

4 large russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Scrub the potatoes thoroughly under running water to remove any dirt. Pat them dry with a kitchen towel.

Cut each potato in half lengthwise, then cut each half into wedges (about 6-8 wedges per potato).

In a large mixing bowl, combine the olive oil, minced garlic, garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper. Mix well to form a marinade.

Add the potato wedges to the bowl and toss to coat each wedge evenly with the marinade.

Spread the coated potato wedges in a single layer on the prepared baking sheet, leaving space between each wedge for better crisping.

Bake in the preheated oven for 25-30 minutes, flipping the wedges halfway through, until they are golden brown and crispy.

Remove the potato wedges from the oven and immediately sprinkle the grated Parmesan cheese over the hot wedges, allowing it to melt slightly.

Transfer the wedges to a serving platter, and garnish with freshly chopped parsley before serving.
