Ingredients

1 cup all-purpose flour

1 cup milk

6 large eggs

1/4 teaspoon salt

1 teaspoon vanilla extract

3 tablespoons unsalted butter

Powdered sugar, for dusting

Fresh lemon juice or maple syrup, for serving

Optional toppings: fresh berries, sliced bananas, or whipped cream

Instructions

Preheat your oven to 425°F (220°C). Make sure your oven rack is in the middle position.

Melt the butter in a large cast-iron skillet or oven-safe baking dish in the preheating oven for about 5 minutes, or until it is bubbling and just beginning to brown.

While the butter melts, combine the flour, milk, eggs, salt, and vanilla extract in a blender. Blend on high for about 10-15 seconds until the mixture is smooth and well-combined. Scrape down the sides if necessary to ensure everything is incorporated.

Carefully remove the hot skillet from the oven. Pour the batter directly into the skillet over the melted butter. It’s normal for it to bubble slightly.

Place the skillet back in the oven and bake for 20-25 minutes, or until the pancake is puffed up and golden brown on the edges. Do not open the oven door during baking, as this may cause the pancake to deflate.

Once baked, remove from the oven and let it cool for a minute. It will sink slightly as it cools.

Dust with powdered sugar and squeeze fresh lemon juice over the top, or drizzle with maple syrup.

Slice and serve warm, topped with berries or banana slices if desired.
