Ingredients
  

3 large eggs

1 cup whole milk

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup unsalted butter

Powdered sugar for dusting

Fresh lemon juice or berries for serving (optional)

Instructions
 

Preheat your oven to 425°F (220°C). Place a large oven-safe skillet (preferably cast iron) or a baking dish in the oven to heat up as well.

    In a mixing bowl, whisk together the eggs, milk, flour, sugar, vanilla extract, and salt until well combined and slightly frothy. Make sure there are no lumps.

      Carefully remove the hot skillet or baking dish from the oven. Add the butter to the skillet, allowing it to melt completely and coat the bottom.

        Pour the batter into the skillet over the melted butter. It will sizzle, which is perfect!

          Return the skillet to the oven and bake for 20-25 minutes or until the pancake is puffed and golden brown around the edges.

            Once baked, remove it from the oven. The pancake will deflate slightly as it cools; this is normal.

              Dust with powdered sugar and serve immediately with a squeeze of fresh lemon juice or topped with berries if desired.
