Ingredients
  

For the Kibbeh Shell:

2 cups fine bulgur wheat

1 cup boiling water

1 pound ground lamb or beef (or a mix)

1 medium onion, finely chopped

1 teaspoon ground cinnamon

1 teaspoon allspice

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

¼ cup pine nuts, toasted (optional)

¼ cup fresh parsley, chopped

For the Filling:

1 pound ground lamb or beef

1 medium onion, finely chopped

2 tablespoons olive oil

1 teaspoon ground cinnamon

1 teaspoon allspice

½ teaspoon salt

½ teaspoon black pepper

¼ cup pine nuts, toasted (optional)

¼ cup fresh parsley, chopped

For Assembly:

2 tablespoons olive oil

1 tablespoon melted butter (optional)

Instructions
 

Prepare the Bulgur Dough:

    - In a bowl, place the bulgur wheat and pour the boiling water over it. Cover and let it soak for about 30 minutes, until the bulgur is tender and all water has been absorbed.

      - Once ready, mix in the ground meat, onion, cinnamon, allspice, cumin, salt, and black pepper until well combined. Add the chopped parsley and pine nuts, if using. Knead the mixture with your hands for 5–10 minutes until the dough is smooth and pliable.

        Prepare the Filling:

          - In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.

            - Add the ground meat, breaking it up with a spatula, and cook until browned. Season with cinnamon, allspice, salt, black pepper, and add pine nuts if using. Stir in the parsley and remove from heat. Set aside to cool.

              Assemble the Kibbeh:

                - Preheat your oven to 375°F (190°C).

                  - Grease a 9x13 inch baking dish with olive oil. Divide the bulgur mixture into two equal portions.

                    - Press the first half into the bottom of the baking dish to form a flat layer.

                      - Spread the meat filling evenly over the bottom layer, leaving a small border around the edges.

                        - Take the second half of the bulgur mixture and flatten it out on a piece of parchment paper; then carefully transfer it over the filling, sealing the edges well.

                          Bake:

                            - Score the top layer into diamond or square shapes with a sharp knife. Drizzle olive oil and melted butter over the top for a golden finish.

                              - Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and crispy.

                                Serve:

                                  - Let the Kibbeh rest for about 10 minutes before slicing. Serve hot or warm with a side of yogurt sauce and a fresh salad.
