2 ripe bananas, mashed

1 cup unsweetened applesauce

1/3 cup melted coconut oil (or vegetable oil)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, combine the mashed bananas and applesauce. Stir in the melted coconut oil until well mixed.

      Add the brown sugar and granulated sugar to the banana-applesauce mixture, whisking until smooth.

        Incorporate the eggs, one at a time, followed by the vanilla extract. Mix until all ingredients are well blended.

          In a separate bowl, whisk together the baking soda, baking powder, salt, cinnamon, and flour.

            Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. It's okay if the batter is a bit lumpy; do not overmix.

              If using, fold in the chopped nuts and chocolate chips for added texture and sweetness.

                Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

                  Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
