Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup mashed blueberries (fresh or thawed if frozen)

1/4 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans, optional)

1/4 cup dark chocolate chips or raisins (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir well until smooth.

Add Dry Ingredients: In another bowl, mix the rolled oats, baking powder, cinnamon, and salt. Gradually add this dry mixture to the wet mixture and stir until combined.

Fold in Blueberries: Gently fold in the mashed blueberries, nuts (if using), and chocolate chips or raisins (if using) until evenly distributed.

Form Cookies: Use a tablespoon or a small cookie scoop to portion out the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of the spoon or your fingers.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the cookies appear set.

Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These cookies can be stored in an airtight container for up to a week. Enjoy them as a nutritious breakfast or snack!
