3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon baking soda

Pinch of salt

3/4 cup sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

For the French Toast:

4 thick slices of homemade banana bread

3 large eggs

1/2 cup milk

1 teaspoon cinnamon

1 teaspoon vanilla extract

Butter for frying

For the Bananas Foster Sauce:

2 tablespoons unsalted butter

1/2 cup packed brown sugar

1 teaspoon cinnamon

1 banana, sliced

1/4 cup rum (optional)

Vanilla ice cream for serving

Instructions
 

Prepare the Banana Bread:

    - Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the mashed bananas and melted butter. Stir in the baking soda and salt. Add the sugar, beaten egg, and vanilla, mixing until combined. Fold in the flour until just incorporated.

      - Pour the batter into a greased loaf pan and bake for about 60 minutes, or until a toothpick comes out clean. Let it cool before slicing.

        Make the French Toast:

          - In a bowl, whisk together the eggs, milk, cinnamon, and vanilla extract.

            - Heat a skillet over medium heat and add a bit of butter. Dip each slice of banana bread into the egg mixture, allowing it to soak for a few seconds on each side.

              - Cook the soaked bread slices in the skillet until golden brown on both sides, about 3-4 minutes per side. Keep warm.

                Prepare the Bananas Foster Sauce:
