Ingredients
  

1 lb boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

Vegetable oil for frying

Bang Bang Sauce:

1/3 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (or more to taste)

1 tsp honey

1 tsp lime juice

Garnish:

Sliced green onions

Sesame seeds

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the buttermilk with a pinch of salt and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (preferably overnight).

      Prepare the Coating:

        - In a large mixing bowl, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and pepper. This will create a crunchy coating for the chicken.

          Heat the Oil:

            - In a deep skillet or pot, fill with about 2 inches of vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C).

              Coat the Chicken:

                - Remove the marinated chicken from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture until fully coated. Shake off any excess flour.

                  Fry the Chicken:

                    - Carefully place the coated chicken in the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Use a slotted spoon to transfer the chicken to a paper towel-lined plate to drain excess oil.

                      Make the Bang Bang Sauce:

                        - In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust sriracha to your preferred spice level.

                          Assemble and Serve:

                            - Drizzle the Bang Bang sauce over the fried chicken, or serve it on the side for dipping. Garnish with sliced green onions and sesame seeds for added flavor and crunch.
