Ingredients
  

1 lb boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

Cooking oil (for frying)

1 cup cooked jasmine rice

1 cup shredded cabbage (green or purple)

1/2 cup shredded carrots

1/4 cup green onions, sliced

1/4 cup cilantro, chopped (optional)

Sesame seeds for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

1 tablespoon sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon lime juice

Instructions
 

Prepare the Chicken:

    - Slice the chicken breasts into bite-sized pieces. Pat dry with paper towels and season with salt and pepper.

      Setup the Breading Station:

        - In one shallow bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, add the panko breadcrumbs.

          Bread the Chicken:

            - Dredge each chicken piece in flour, shaking off the excess. Then dip into the beaten eggs, allowing the excess to drip off. Finally, coat thoroughly with panko breadcrumbs. Place the breaded chicken on a plate.

              Make the Bang Bang Sauce:

                - In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Whisk together until smooth and set aside.

                  Fry the Chicken:

                    - In a large skillet, heat about 1/2 inch of cooking oil over medium-high heat. Once hot, carefully add the breaded chicken pieces in batches (avoid overcrowding the pan). Fry until golden brown and cooked through, about 3-4 minutes per side. Remove and place on a paper towel-lined plate to drain the excess oil.

                      Assemble the Bowls:

                        - In serving bowls, start with a base of jasmine rice. Top with shredded cabbage, carrots, and sliced green onions. Add the crispy Bang Bang chicken on top.

                          Drizzle with Sauce:

                            - Generously drizzle the Bang Bang sauce over the assembled bowls. Sprinkle with sesame seeds and fresh cilantro if desired.
