1 lb (450g) boneless, skinless chicken thighs

1 cup cornstarch

2 eggs, beaten

1 cup panko breadcrumbs

1 cup mixed greens (spinach, arugula, etc.)

1 cup cooked jasmine rice

1/2 cucumber, thinly sliced

1/2 red bell pepper, thinly sliced

1/4 cup green onions, sliced

1 avocado, sliced

Sesame seeds, for garnish

Fresh cilantro, for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Prepare the Bang Bang Sauce: In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well and set aside.

    Marinate the Chicken: Cut the chicken thighs into bite-sized pieces. In a bowl, toss the chicken pieces with a pinch of salt and pepper. Let it marinate for about 15 minutes.

      Coat the Chicken: Set up a coating station with three shallow dishes: one with cornstarch, the second with beaten eggs, and the third with panko breadcrumbs. Dredge each chicken piece first in cornstarch, then dip into the egg, and finally coat with panko breadcrumbs until fully covered.

        Fry the Chicken: In a large skillet, heat about 1/4 inch of oil over medium-high heat. Once the oil is hot, add the coated chicken pieces in batches, being careful not to overcrowd the pan. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

          Assemble the Bowl: In serving bowls, start with a generous scoop of jasmine rice. Top with mixed greens, followed by fried chicken, cucumber slices, red bell pepper, and avocado slices. Drizzle with the Bang Bang sauce and sprinkle with sesame seeds and fresh cilantro.
