1 pound boneless, skinless chicken thighs

1 cup panko breadcrumbs

1/2 cup cornstarch

1 large egg

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust for heat preference)

2 cups cooked jasmine rice

1 cup shredded purple cabbage

1 cup sliced cucumbers

1 cup cherry tomatoes, halved

1/4 cup chopped green onions

Sesame seeds for garnish

Instructions
 

Prep the Chicken: Preheat your oven to 400°F (200°C). In a medium bowl, combine panko breadcrumbs, salt, pepper, garlic powder, and onion powder. Set aside.

    Coat the Chicken: In another bowl, beat the egg. Dredge each chicken thigh in cornstarch, dip into the egg mixture, and then coat thoroughly in the panko mixture. Place on a baking sheet lined with parchment paper.

      Bake the Chicken: Bake chicken in the preheated oven for 25-30 minutes, or until golden brown and cooked through (internal temperature should reach 165°F). Flip halfway through for even crispiness.

        Make the Bang Bang Sauce: While the chicken is baking, whisk together the mayonnaise, sweet chili sauce, and Sriracha in a small bowl until well combined. Adjust Sriracha to taste for desired spiciness.

          Prepare the Bowls: Once the chicken is done, let it rest for a few minutes before slicing. In serving bowls, layer cooked jasmine rice as the base, top with shredded purple cabbage, sliced cucumbers, and cherry tomatoes.
