Bang Bang Chicken Bowls

Ingredients
  

1 lb boneless, skinless chicken thighs

1 cup cornstarch

2 tbsp vegetable oil

1 cup cooked white rice

1 cup shredded carrots

1 cup cucumber, thinly sliced

1 avocado, sliced

1/4 cup chopped green onions

1/4 cup toasted sesame seeds

1 cup Bang Bang sauce (see below for recipe)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp lime juice

Instructions
 

Prepare Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth. Set aside.

    Cook Chicken: Cut the chicken thighs into bite-sized pieces. In a large bowl, toss the chicken pieces with cornstarch until well-coated.

      Fry Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the coated chicken pieces in a single layer and cook until golden brown and cooked through, about 5-7 minutes. Remove from heat.

        Assemble Bowls: In bowls, layer cooked white rice as the base. Top with fried chicken, shredded carrots, cucumber slices, avocado, and a sprinkle of green onions.

          Add Sauce: Drizzle the Bang Bang sauce generously over the top of each bowl. Finish with a sprinkle of toasted sesame seeds.

            Garnish and Serve: Serve the bowls warm, garnished with extra green onions and sesame seeds if desired. Enjoy!
