BBQ Chicken Grilled Cheese

Ingredients
  

2 cups shredded cooked chicken

1/2 cup BBQ sauce (your favorite brand or homemade)

4 slices of sourdough bread

1 1/2 cups shredded cheddar cheese

1/2 cup sliced red onion

1/4 cup fresh cilantro, chopped (optional)

2 tablespoons butter

Salt and pepper to taste

Instructions
 

In a mixing bowl, combine the shredded chicken and BBQ sauce. Stir until the chicken is evenly coated. Adjust seasoning with salt and pepper as needed.

    Heat a skillet over medium heat. While the skillet is heating, butter one side of each slice of sourdough bread.

      Place two slices of bread, buttered side down, in the skillet. On each slice, add half of the cheddar cheese, followed by a generous portion of the BBQ chicken mixture, sliced red onion, and a sprinkle of cilantro if using. Top with the remaining cheddar cheese, and finish with the other two slices of bread, buttered side up.

        Cook for about 3-4 minutes, or until the bottom slice is golden brown and the cheese begins to melt. Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.

          Remove from the skillet and let them rest for a minute before slicing.

            Serve hot and enjoy the melty, savory goodness!
