1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup BBQ sauce (plus extra for drizzling)

1 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

Wooden or metal skewers

For the salad:

4 cups mixed greens (spinach, kale, romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 red onion, thinly sliced

1 cup corn (fresh or grilled)

1/2 cup shredded cheese (cheddar or feta)

Fresh cilantro, for garnish

For the dressing:

3 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp honey

Salt and pepper to taste

Marinate the Chicken: In a bowl, combine the cubed chicken, BBQ sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Prepare the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto the wooden or metal skewers, leaving a little space between each piece for even cooking.
