1 lb ground beef

2 medium potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Potatoes: In a medium pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-12 minutes. Drain and set aside.

    Brown the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

      Sauté Aromatics: Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is translucent, about 3-4 minutes.
