Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 10 oz enchilada sauce
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 small flour or corn tortillas
  • 2 cups shredded cheese
  • ½ cup sour cream
  • fresh cilantro chopped

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned, then drain excess fat.
  • Add the chopped onion and minced garlic, sauté until the onion is translucent.
  • Stir in black beans, cumin, chili powder, salt, and pepper; cook for 2-3 minutes.
  • Warm tortillas in the microwave for 20-30 seconds to make them pliable.
  • Place a couple of tablespoons of the beef mixture in each tortilla, roll them up tightly, and place seam-side down in a greased baking dish.
  • Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  • Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes.
  • Let cool for a few minutes, then serve warm topped with sour cream and cilantro.
