1 pound ground beef

1 small onion, finely chopped

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

4 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup sour cream

1 cup salsa

1/2 cup sliced black olives (optional)

2 green onions, chopped (for garnish)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef and onion until the meat is cooked through and the onions are translucent. Drain excess fat.

      Stir in the black beans, diced tomatoes (with the juice), and taco seasoning. Simmer for 5 minutes, allowing the flavors to combine.

        In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips on the bottom.

          Spread half of the beef mixture over the chips, then layer half of the shredded cheddar cheese on top.

            Add another layer of the crushed tortilla chips, followed by the remaining beef mixture and cheese.

              Spoon the sour cream and salsa over the top, and sprinkle with sliced black olives if desired.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions and cilantro before serving.
