1 loaf of brioche or challah bread, cut into 1-inch cubes

2 cups mixed berries (strawberries, blueberries, raspberries)

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

6 large eggs

2 cups whole milk

1 teaspoon cinnamon

1 tablespoon maple syrup

1/2 teaspoon salt

1/4 cup granola (for topping)

Instructions
 

Prepare the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy. Gently fold in the mixed berries, being careful not to crush them.

    Layer the Bread and Cream Cheese: In a greased 9x13-inch baking dish, place half of the bread cubes. Spread the cream cheese and berry mixture evenly over the bread. Add the remaining bread cubes on top.

      Make the Egg Mixture: In a large bowl, whisk together the eggs, milk, cinnamon, maple syrup, and salt until well combined.

        Combine Layers: Pour the egg mixture evenly over the bread cubes in the baking dish, gently pressing down on the bread to ensure it soaks up the custard. Cover the dish with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

          Bake the Casserole: Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for about 15 minutes. Sprinkle granola on top for added crunch. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and set.
