1 cup mung bean sprouts

1 cup grated fresh coconut

1/2 cup shrimp, peeled and minced

1/2 cup all-purpose flour

1/4 cup cornstarch

1/2 teaspoon baking powder

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Water (as needed)

Vegetable oil (for frying)

Instructions
 

In a mixing bowl, combine the mung bean sprouts, grated coconut, minced shrimp, chopped onion, and garlic. Toss everything together until well mixed.

    In a separate bowl, whisk the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add water to create a smooth batter, aiming for a consistency that will hold the mixed ingredients together (not too runny).

      Fold the vegetable mixture into the batter until it is evenly coated.

        Heat vegetable oil in a deep frying pan over medium-high heat. To check if the oil is ready, drop a small amount of batter into the oil; if it sizzles, it’s ready.

          Using a spoon, scoop small portions of the mixture and carefully drop them into the hot oil. Fry until golden brown and crispy, about 3-4 minutes on each side.

            Remove the okoy from the oil and place them on a plate lined with paper towels to drain excess oil.

              Serve immediately with a side of vinegar or a dipping sauce of your choice.
