12 oz fettuccine or spaghetti

2 large chicken breasts, diced

4 oz pancetta or guanciale, diced

4 large eggs

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Additional Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the noodles.

    Prepare the Chicken: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season the diced chicken with salt and pepper, then add to the skillet. Cook for 6-8 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Pancetta: In the same skillet, add the pancetta or guanciale. Cook for about 4-5 minutes, or until crispy. Add the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.

        Mix the Sauce: In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add a pinch of salt and black pepper.

          Combine Ingredients: Return the cooked chicken to the skillet with the pancetta. Add the drained pasta into the skillet and toss to combine, ensuring everything is well mixed.

            Create Creamy Sauce: Remove the skillet from the heat and quickly pour in the egg and cheese mixture, stirring constantly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired creaminess is achieved.

              Serve: Divide the carbonara among plates, garnish with fresh parsley, and top with additional Parmesan cheese if desired. Serve immediately while hot.
