Ingredients
  

1 lb boneless, skinless chicken thighs (cut into 1-inch cubes)

1/2 cup soy sauce (low sodium preferred)

1/4 cup honey

2 tablespoons rice vinegar

2 tablespoons sesame oil

3 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 teaspoon cornstarch (mixed with 1 tablespoon water)

1 red bell pepper (cut into 1-inch pieces)

1 green bell pepper (cut into 1-inch pieces)

1 medium onion (cut into chunks)

2 tablespoons sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Skewers (soaked in water for 30 minutes if wooden)

Instructions
 

In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined.

    Reserve 1/4 cup of the marinade in a separate bowl for later basting, then add the chicken to the remaining marinade. Toss to coat the chicken well. Cover and refrigerate for at least 30 minutes, ideally 2 hours for maximum flavor.

      Preheat your grill or grill pan to medium-high heat.

        While the grill is heating, prepare your skewers. Alternate threading marinated chicken cubes, red and green bell pepper pieces, and onion chunks onto the skewers.

          Once the grill is hot, place the skewers on it. Grill for about 4-5 minutes on each side, basting with the reserved marinade occasionally, until the chicken is cooked through and has nice grill marks.

            In the last minute of grilling, brush the skewers with the cornstarch and water mixture to create a glossy finish. Cook until slightly thickened.

              Remove the skewers from the grill and let them rest for a couple of minutes. Sprinkle with sesame seeds and fresh cilantro, if using.
