Ingredients
  

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup unsalted cashews

2 tablespoons vegetable oil

1 medium onion, diced

3 cloves garlic, minced

1 inch ginger, grated

1 bell pepper (any color), diced

2 cups broccoli florets

1/4 cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water

1 teaspoon sesame oil

Cooked rice, for serving

Chopped green onions and sesame seeds, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken with 2 tablespoons of soy sauce, garlic, and ginger. Let it marinate for at least 15 minutes while preparing other ingredients.

    Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce, hoisin sauce, rice vinegar, and cornstarch mixture. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken pieces and sauté until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the onion, bell pepper, and broccoli florets. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.

          Combine Everything: Return the chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables, stirring well to coat. Cook for another 2-3 minutes until the sauce thickens and everything is heated through.

            Add Cashews: Stir in the cashews and sesame oil, mixing well to combine. Cook for an additional 1-2 minutes.

              Serve: Serve the Better-Than-Takeout Cashew Chicken over cooked rice. Garnish with chopped green onions and sesame seeds for an extra touch!
