2 cups rice flour

1 cup coconut milk

1 cup water

1 cup sugar

1 cup grated fresh coconut (or desiccated coconut)

2 teaspoons baking powder

1/2 teaspoon salt

2 eggs (lightly beaten)

2 tablespoons melted butter (plus more for greasing)

Banana leaves (for lining the baking pan)

Optional toppings: cheese, salted egg slices, or grated coconut

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If using, soak the banana leaves in warm water for a few minutes to make them pliable, then line a round baking pan (about 9 inches in diameter) with the leaves, allowing some overhang.

    Mix Dry Ingredients: In a large bowl, combine the rice flour, baking powder, sugar, and salt. Whisk until well blended.

      Combine Wet Ingredients: In another bowl, whisk together the coconut milk, water, and lightly beaten eggs. Slowly add the melted butter and mix well.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring until just combined. The batter should be thick but pourable. Fold in the grated coconut.

          Bake: Pour the batter into the prepared baking pan. Top with your choice of cheese or salted egg slices if desired. Bake in the preheated oven for about 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

            Finish Up: Once done, remove from the oven and let cool slightly. Carefully peel away the banana leaves before slicing. Serve warm, optionally with additional toppings like grated coconut or more butter.
