2 cups birria meat (beef or goat), shredded

4 slices of sourdough or Texas toast bread

1 cup Oaxaca cheese or mozzarella, shredded

1/2 cup Monterey Jack cheese, shredded

2 tablespoons unsalted butter

1/4 cup birria broth (for dipping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sliced pickled onions (optional)

Prepare the Birria Filling: Place the shredded birria meat in a bowl. Add a few tablespoons of the birria broth to retain moisture (adjust to taste) and mix well.

    Assemble the Sandwich: Lay out two slices of bread and evenly distribute the shredded Oaxaca and Monterey Jack cheese on each slice. Top one side with the shredded birria meat, then sprinkle with more cheese before topping with the other slice of bread.

      Heat the Griddle: In a large skillet or griddle, melt 1 tablespoon of butter over medium heat. Once melted and bubbling, carefully place the assembled sandwiches in the skillet.
