For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

For the Chorizo Gravy:

1/2 pound chorizo sausage, casing removed

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Biscuits:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, combine the flour, baking powder, and salt. Whisk together until well combined.

        - Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

          - Make a well in the center and pour in the buttermilk. Stir gently until just combined. Be careful not to overmix.

            - Turn the dough out onto a floured surface and knead it gently a few times until smooth. Pat it into a rectangle about 1-inch thick.

              - Cut into rounds using a biscuit cutter or a glass. Place the biscuits on a baking sheet lined with parchment paper, close together for soft sides or spaced out for crispier edges.

                - Bake for 12-15 minutes, or until the biscuits are golden brown.

                  Prepare the Chorizo Gravy:

                    - In a large skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Break it up with a spatula as it cooks.

                      - Once cooked, sprinkle the flour over the chorizo and stir to combine, cooking for an additional 2 minutes.

                        - Slowly pour in the milk while continuously stirring to avoid lumps. Bring the mixture to a simmer until the gravy thickens, about 3-5 minutes.

                          - Add garlic powder, onion powder, and season with salt and black pepper to taste. Stir well to combine.

                            Serving:

                              - Cut a biscuit in half and ladle a generous portion of chorizo gravy over the top. Garnish with fresh chopped parsley.

                                - Serve warm and enjoy your hearty meal!
