1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 medium red onion, finely diced

1 red bell pepper, diced

1 jalapeño, seeded and minced (adjust for spice preference)

2 medium tomatoes, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the black beans, corn, diced red onion, red bell pepper, minced jalapeño, and diced tomatoes.

    Add the chopped cilantro and gently mix all the ingredients together until well combined.

      Squeeze the juice of the limes over the mixture and sprinkle the ground cumin, salt, and pepper.

        Stir everything gently again until the lime juice and spices are evenly distributed throughout the mixture.

          Cover the bowl with plastic wrap or transfer the salsa to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.

            Serve chilled or at room temperature with tortilla chips, tacos, or as a topping for grilled meats.
