500g boneless chicken thighs, sliced into thin strips

3 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

2 bell peppers (one red, one green), sliced

4 cloves garlic, minced

1-inch piece of ginger, minced

2 tablespoons freshly ground black pepper (adjust to taste)

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 teaspoon sugar

Salt to taste

2 green onions, chopped (for garnish)

Cooked rice (for serving)

Instructions
 

Marinate Chicken: In a bowl, combine sliced chicken, soy sauce, and cornstarch. Mix well to coat the chicken evenly and let it marinate for about 30 minutes.

    Prepare Sauce: In a small bowl, mix together the oyster sauce, rice vinegar, sugar, and a pinch of salt. Set this sauce aside.

      Cook Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Stir-Fry Vegetables: In the same skillet, add another tablespoon of oil if needed. Stir in the onion, bell peppers, garlic, and ginger. Sauté for 3-4 minutes until the vegetables are tender but still crisp.

          Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Sprinkle in the freshly ground black pepper and pour in the prepared sauce. Stir everything together and cook for an additional 2-3 minutes to allow the flavors to meld.

            Serve: Remove from heat, garnish with chopped green onions, and serve hot over cooked rice.
