Ingredients

1 lb pork tenderloin, cut into bite-sized pieces

2 teaspoons smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons butter

Fresh parsley, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Spice Mix: In a small bowl, combine the smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and black pepper. This will be your blackening spice mix.

Season the Pork: Place the pork pieces in a large bowl. Drizzle with olive oil, then sprinkle the blackening spice mix over the pork. Toss until all pieces are evenly coated.

Heat the Pan: In a large skillet, heat the butter over medium-high heat. Allow it to melt and become bubbly but not browned.

Cook the Pork: Once the butter is hot, add the seasoned pork bites to the skillet in a single layer (cook in batches if necessary to avoid overcrowding). Sear for about 2-3 minutes on each side, or until they are blackened and cooked through, with a nice crust.

Garnish and Serve: Remove the blackened pork bites from the skillet and sprinkle with fresh parsley. Serve immediately with lime wedges on the side for squeezing over the top.
