4 salmon fillets (about 6 oz each)

2 tablespoons paprika

1 teaspoon cayenne pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

½ cup heavy cream

3 tablespoons Dijon mustard

1 tablespoon honey

Juice of 1 lemon

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Blackening Spice: In a small bowl, combine the paprika, cayenne pepper, onion powder, garlic powder, thyme, oregano, salt, and black pepper. Mix well to create a uniform spice blend.

    Season the Salmon: Pat the salmon fillets dry with paper towels. Rub each fillet generously with the olive oil on both sides. Then, sprinkle the blackening spice evenly over the fillets, making sure to coat them thoroughly.

      Cook the Salmon: Heat a large skillet over high heat until it's very hot. Carefully place the seasoned salmon fillets in the skillet and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a charred appearance with a crispy crust. Remove from the skillet and let them rest while preparing the sauce.

        Make the Creamy Dijon Sauce: In the same skillet, reduce the heat to medium. Add the heavy cream, Dijon mustard, honey, and lemon juice. Stir constantly, scraping up any bits from the bottom of the skillet until the sauce is smooth and creamy (about 2-3 minutes).

          Plate and Serve: Carefully place the blackened salmon on serving plates. Drizzle the creamy Dijon sauce generously over each fillet. Garnish with fresh parsley if desired.
