Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

2 teaspoons baking powder

½ teaspoon baking soda

1 large egg

½ cup milk (whole or buttermilk)

½ cup unsalted butter, melted

1 teaspoon vanilla extract

1 ½ cups fresh blueberries (or frozen, if not in season)

Optional: 1 tablespoon coarse sugar for topping

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease with cooking spray.

Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, salt, baking powder, and baking soda.

Prepare Wet Ingredients: In another bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Mix until well combined.

Combine Mixtures: Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined. It's okay if the batter is slightly lumpy; do not overmix.

Fold in Blueberries: Carefully fold in the blueberries, ensuring an even distribution without breaking them.

Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. If desired, sprinkle a little coarse sugar on top for added crunch.

Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean, and the tops are golden brown.

Cool and Serve: Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
