Ingredients
  

1 pound tater tots (frozen)

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage

1/2 cup diced bell peppers (any color)

1/4 cup diced onions

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    Spread the frozen tater tots evenly in the bottom of the prepared baking dish. Bake for 25 minutes until they start to get crispy.

      In a large mixing bowl, whisk together the eggs and milk until well combined. Add the garlic powder, paprika, salt, and pepper. Stir in the cooked sausage, bell peppers, and onions. Mix thoroughly.

        Once the tater tots are done baking, remove them from the oven and pour the egg mixture evenly over them.

          Sprinkle the shredded cheddar cheese over the top of the casserole.

            Return to the oven and bake for an additional 25-30 minutes, or until the eggs are set and the cheese is bubbly and golden.

              Remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley if desired.

                Cut into squares and serve warm. Enjoy your hearty and flavorful tater tot breakfast casserole!
