2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon sugar

1/2 cup unsalted butter, cold and cubed

6-8 tablespoons ice water

1 cup scrambled eggs (about 4 large eggs)

1 cup cooked breakfast sausage, crumbled (or cooked bacon)

1 cup shredded cheddar cheese

1/4 cup diced bell peppers

1/4 cup chopped green onions

1 teaspoon garlic powder

Salt and pepper to taste

1 egg, beaten (for egg wash)

Instructions
 

Make the Dough: In a large mixing bowl, combine flour, salt, and sugar. Add the cold, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the Filling: In a medium bowl, whisk the eggs and scramble them in a non-stick skillet over medium heat. Once cooked, add the crumbled sausage (or bacon), cheddar cheese, diced bell peppers, green onions, garlic powder, salt, and pepper. Mix until well combined and remove from heat to cool slightly.

      Roll Out Dough: Preheat your oven to 400°F (200°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter (about 4-5 inches in diameter) to cut out circles.

        Assemble the Hand Pies: Place about 2 tablespoons of the filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, then crimp with a fork for a decorative touch.

          Brush with Egg Wash: Place the hand pies on a parchment-lined baking sheet. Brush the tops with the beaten egg to give them a golden color when baked.

            Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown.
