1 sheet of puff pastry (thawed if frozen)

2 large eggs

1/4 cup milk

1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

1/2 cup cooked breakfast sausage or diced ham (optional)

1/4 cup finely chopped bell peppers

1/4 cup finely chopped onions

Salt and pepper to taste

1 egg (for egg wash)

Fresh herbs for garnish (chives or parsley, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Filling: In a mixing bowl, beat the two large eggs with the milk until well combined. Stir in the shredded cheese, cooked breakfast sausage or ham (if using), chopped bell peppers, onions, and season with salt and pepper to taste.

      Roll Out Puff Pastry: On a lightly floured surface, roll out the puff pastry to smooth the creases and make it slightly larger. Cut the pastry into squares, about 4x4 inches.

        Fill Pastry Squares: Place a spoonful of the egg mixture in the center of each pastry square. Be careful not to overfill to prevent spilling during baking.

          Seal the Pastry: Fold the corners of each puff pastry square towards the center to create a pocket, pinching the edges together tightly to seal. For added decoration, you can twist the corners slightly.

            Egg Wash: In a small bowl, whisk the additional egg and brush it over the top of each pastry to give it a golden color while baking.

              Bake: Place the filled pastries on the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.

                Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh herbs if desired, and serve warm or at room temperature.
