Ingredients

1 cup rolled oats

2 cups almond milk (or any milk of your choice)

2 tablespoons brown sugar (adjust for sweetness)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup Greek yogurt (optional for creaminess)

1/2 banana, sliced (for topping)

2 tablespoons chopped walnuts or pecans (for crunch)

A drizzle of maple syrup (optional, for serving)

Instructions

In a medium bowl, combine the rolled oats, almond milk, brown sugar, vanilla extract, ground cinnamon, and salt. Stir until the brown sugar is well mixed and dissolved.

If you want extra creaminess, fold in the Greek yogurt until fully incorporated.

Cover the bowl with plastic wrap or transfer the mixture to an airtight container and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid and soften.

In the morning, give the oats a good stir. If the mixture is too thick, you can add a splash of milk to reach your desired consistency.

Serve the oats in bowls and top with sliced banana, chopped walnuts or pecans, and a drizzle of maple syrup if desired.
